Chicken-less Salad Sandwiches

Serves 3-4
Vegetarian/Vegan

That’s right. You heard me. Chicken salad. Even vegetarians should be able to enjoy this comfort food once and awhile.

1 bag of fake chicken (I like Morningstar Farms Chik’n Strips, but use whatever you like)
olive oil or non-stick spray
1 stalk of celery, diced
2 green onions, diced
mayonnaise or Veganaisse
lime juice
salt and pepper
sliced bread
mustard (I prefer whole grain stone ground mustard)
sandwich fixins: sliced tomatoes, lettuce, onions, avocado, sprouts, whatever you like

Sautee chicken strips in a pan. While the chicken cooks, prepare your sandwich fixins and toast your bread. When the chicken is warmed through, chop it up into small pieces, and put into a mixing bowl.

To the chicken, add mayonnaise, celery, green onion, lime juice, salt and pepper to taste.

Build your delicious sandwich and eat with chips and carrot sticks on the side.

Try serving the chicken salad on a bed of spinach with a spritz of lemon for a light lunch.
